Hello & happy new year, folks! I hope you had a wonderful holiday. Being back at home in Florida for the holidays was truly awesome! Never take living near family & friends for granted. My husband & I are so grateful that we were able to see most of our family this year. <3

Anyways, onto the reason for my post today: smoothie bowls! Who else made a resolution to make this year a healthier one? Smoothie bowls will definitely help you achieve that. Delicious & healthy- you can’t beat that! There are thousands of recipes for smoothie bowls on the internet, many of which I have tried. A lot of them call for xantham gum which I don’t particularly care for. This week I was making a smoothie & decided to add cottage cheese for added protein. BAM! A perfect substitution for xantham gum & a heavenly bowl of health was born. This tropical smoothie bowl is easy (only 6 ingredients), can be topped with unlimited options (raspberries ,coconut shavings, chocolate chips, etc.), & the kicker: SPINACH! It has spinach in it & I pinky promise you can’t taste it, like, at all. *drops mic & walks away to enjoy delicious smoothie bowl*

Tropical Smoothie Bowl

Ingredients:

  • 1 serving (85g) baby spinach
  • 1 scoop (34g) vanilla or similar protein powder (I use Ghost’s Cereal Milk Whey powder from GNC)
  • 2 servings (280) frozen tropical fruit blend (I use Wyman’s brand with pinapple, coconut, strawberries & mango from Publix)
  • 1 serving (113g) low-fat 1% cottage cheese
  • 4 ice cubes
  • 1/2 cup water

Directions:

Combine ingredients into a blender & blend away! That easy! Since this is a smoothie bowl it will be thick so you may need to use a spatula & push the ingredients down a few times until well blended. I use a Ninja & it takes about two to three minutes of blending to get it to a smooth, fluffy consistency. After that, simply spoon it into a BIG bowl (or save half for a second bowl later), top with whatevs & enjoy!

Makes 1 large serving. 440 calories | 45g carbs | 9.5g fat | 44g protein | 8g fiber
